In the rapidly evolving culinary landscape of Jaipur, there is a restaurant that has stood resilient against the tides of change: Niros. On August 1, 2024, Niros celebrated its 75th anniversary. This iconic restaurant embodies the spirit and legacy of the city. Founded by the visionary late Mr. Ved Pardal, Niros is synonymous with fine dining in Jaipur. Each brick of Niros tells a story, each dish a memory, and each guest a cherished part of its history. The restaurant has evolved over the decades, yet it remains a sanctuary for food lovers, seamlessly blending nostalgia with contemporary culinary trends. Today, the legacy of Niros is carried forward by Mr. Pardal’s sons, Vinay and Rajnish, along with his grandson, Hamit Pardal, who honour their father’s vision while infusing their unique perspectives into the dining experience.

In an exclusive conversation, Rajnish Pardal shares insights into the restaurant’s evolving menu, the diverse clientele that frequents Niros, and the treasured memories that have shaped its journey. 

In a city where dining spaces open and shut frequently, what is the secret sauce of a whopping 75 years (and counting) of existence?

Our secret lies in personalized attention. From the very inception of Niros, we have focused on every detail—whether it’s the quality of our ingredients, staff training, or the cleanliness of the restaurant. You will always find a member of our family on-site, overseeing operations.

In 75 years, there must have been some dishes that have been there since inception?

Chicken Cutlet

Yes, some of the dishes that have remained on our menu since the beginning include hamburgers, club sandwiches, chicken cutlets, mutton cutlets, and vegetable cutlets. These items have been a part of our offerings since Niros opened in 1949.

What leads to a change in the menu, and which has been a recent popular addition?

Laal Maas

We change our menu based on current trends and customer feedback. If we notice that a dish isn’t performing well, we remove it. A dish that tourists often seek when visiting Jaipur is Laal Maas, which we added to the menu about 15 years ago. It’s my own recipe that I taught to our culinary team. We sell 60-70 portions of Laal Maas daily, showcasing its immense popularity. Whenever I discover a new dish, I try making it at home; if it turns out well, I introduce it to our kitchen.

Which are the most bestselling items on your menu?

Paneer Butter Masala, Pindi Chana, and Laal Maas are undoubtedly our bestsellers.

How important is the role of the staff in the success of an F&B space?

The role of our staff is crucial. Good service can substitute for bad food, but good food cannot make up for poor service. Many of our team members have been with us for over 30 years. We prioritize treating them and their families well. While they might earn a bit more at other establishments, the sense of security and warmth we provide is hard to replicate. We are what we are because of our team!

Tell us about a memorable customer interaction.

Chetna Shah, who lives in Pune, is a big fan of the butter chicken at Niros. She loves it so much that she always carries it with her or asks someone coming from Jaipur to bring it to her. Once, on a trip from Jaipur to Pune, she even carried frozen butter chicken. Unfortunately, she was involved in a serious accident, but she survived. Even then, she made sure that the butter chicken did not go to waste and asked her family to retrieve it from the damaged car. When she finally returned from the hospital with a dislocated shoulder, she found solace in the butter chicken from Niros. The next time she visited, she recounted this incident to us, and it was truly heartwarming.

In so many years, you must have noticed some change in the eating out culture of Jaipur?

Earlier, there was hardly a culture of eating out. Now, with both partners often working, it’s challenging for families to cook at home, so they tend to eat out or order in. Niros has always been a space where families come to dine, and we’ve seen multiple generations celebrate special occasions together. Sometimes family members of even 3-4 generations come together. 

What do you have to say about so many eateries opening in the city? Do you ever see them as competition?

Competition is always healthy and keeps you on your toes. As long as your house is in order, competition is not a bad thing.

What advice would you like to give to upcoming or aspiring restaurateurs?

To succeed in this industry, having a passion for food and beverage is essential. However, it also requires a lot of hard work. The hours are long, and you often work through weekends and holidays. Additionally, you need to be resilient and maintain a polite demeanour. Always treat the customer with respect and never argue with them.

“When I was asked to write a few lines on 75 years of Niros in Jaipur, I would briefly say Niros – As Was – So IS! The restaurant was an iconic landmark then and, so is it now, over seven decades later.  

My association with Niros goes back to 1981. I was allotted the Rajasthan cadre and distinctly remember that training session at HCM RIPA. During an informal talk before the session a very senior officer while giving an overview of Jaipur, suddenly asked, how many of us who do not hail from Jaipur have had a meal at Niros. The Pink City is experiencing a dynamic transformation in its culinary landscape. The influence of global food trends is evident in the city, driven by several key factors. The widespread availability of OTT platforms has exposed Jaipurites to international cuisines, sparking a curiousity and desire to experience these flavours firsthand. Entrepreneurs in the food industry are travelling abroad, learning new recipes, and bringing them back to Jaipur, adding diversity to the local food scene. Additionally, the presence of foreigners who have settled in Jaipur and opened restaurants featuring their native cuisines has further enriched the city’s gastronomic offerings. This blend of influences is reshaping Jaipur’s food culture, making it a melting pot of global flavors.

K-Bap filling the gap
Jaipur’s popular food influencer, Divya Bhati, who runs the Instagram blog ‘Jaipur Foodcoaster,’ shares her insights on how international influences such as K-drama and K-Pop, are shaping the city’s culinary scene. “Though my journey with K-drama and K-pop started in 2018, it intensified during the COVID lockdown,” she says. “Not just for me but for many others, K-dramas exude love, hope, compassion, culture, and many other lost virtues. The traditionally rich food of Korea plays a significant role in every series. Beyond noodles and coffee, these dramas often feature family bonding over making kimchi from scratch, grabbing late-night tteokbokki (Cylindrical chewy Rice cakes, boiled and then stirred in spicy  red chilli paste called gochujang and soy sauce) and preparing exclusive festival foods.”

This cultural exposure inspired Divya to experiment with making tteokbokki at home, though her initial attempt at making rice cakes was not successful. “The curiosity to try new foods led me to try making tteokbokki at home, as no other café in Jaipur was offering Korean food,” she recalls. Recently, the Indian market has seen an influx of Korean noodle brands like Nissin, Nongshim, and Samyang, offering flavors such as kimchi, seafood, chicken, and jjajangmyeon. However, what Jaipur lacked was an authentic café serving traditional Korean cuisine. K-Bap, a cafe run by a Korean family with a Korean chef, has stepped in to fill this gap, offering genuine Korean flavours.

“Jaipur’s culinary scene is not just limited to Korean influences. Italian, Mediterranean, and Mexican cuisines are well-represented in the city, and there is even a growing demand for Bhutanese cuisine, fueled by the social media trend for Ema Datshi”, points out the ace food blogger.

Talking about Ema Datshi, which is the national dish of Bhutan, Nitika Kasliwal, Founder of Hops N Taters restaurant in Jaipur says: “Ema Datshi is an combination of cheese, onions and chillies served piping hot with Jasmine Rice. This is a recent addition in our menu but the response has been quite good.” Some other popular international food items on their menu include the Flammkuchen, a German-French thin crust rectangular shaped pizza and the Hungarian Langos, a thick crispy flatbread from the streets of Budapest, eaten with different types of toppings.

Reflecting on her tryst with Jaipur’s foodies, Kasliwal says, “I feel that the Jaipur palate still needs to open up more. Despite the exposure and travel, there is still a lot of hesitation to try something new. It has taken us years to get people to fall in love with our specialties.”

Jaipur gets its first authentic taqueria
While most food entrepreneurs do see a shift in people’s gastronomical choices, they all agree that there is still a lot of untapped potential in Jaipur. “In the past 5-7 years, the city’s food offerings and level of opportunity has grown exponentially with the arrival of sushi, cocktail bars and authentic Neapolitan pizza. That said, Jaipur is still 10 years behind cities like Delhi, Bombay and Bangalore, primarily due to the vast majority of the Jaipur’s diners being vegetarians. A vegetarian market creates barriers for new restaurants and chefs as they are not able to fully come into their own and experiment with pork, seafood and other meats,” shares Aanjneya Singh Bissau, founder of Dos Amigos, Jaipur’s first authentic Mexican cloud taqueria that specializes in Birria tacos.

Aanjneya lived and worked in New York for seven years, where his job required him to maintain relationships with the city’s best restaurants and bars. During this time, he connected with many Mexican chefs who introduced him to the rich and diverse world of Mexican cuisine. This fascination led him to spend a year in Los Cabos, learning to make Birria tacos from a friend and fellow chef. Inspired by the vibrant flavors, he wondered if Jaipur would appreciate an authentic taqueria focusing on Birria tacos and other regional Mexican foods. This idea led to the creation of Dos Amigos, which has received positive feedback within a few months of its inception.

“To stay true to Mexican cuisine and culture, Dos Amigos imports essential ingredients like Ancho, Guajillo, and Chipotle chilies from Mexico. These chilies, combined with their homemade corn tortillas, give their tacos a distinct and authentic flavour that has resonated well with Jaipur’s food enthusiasts”, he adds.

From Korean tteokbokki to Mexican Birria tacos, from Burmese Ema Datshi to Hungarian langos,  the Pink City’s palate reflects a growing openness to diverse flavours. Yet, while Jaipur’s dining scene continues to expand, challenges persist, notably with a predominantly vegetarian market limiting experimentation with non-vegetarian cuisines. Nonetheless, pioneering ventures like Dos Amigos, K-Bap and Hops N Taters are breaking barriers, bringing authentic global cuisines to Jaipur’s tables.

The renowned heritage hotel of the Pink City, Narain Niwas was built in 1928 by General Amar Singh Kanota, an important figure in the Kanota family and the Commander-in-chief of the Jaipur Maharaja’s army. General Kanota’s legacy is etched in history as he was among the first batch of cadets to be inducted in the British Indian Army as officers in 1905. During his wait for deployment orders to the frontlines, he spent close to a month in Orleans, the picturesque French city renowned for its enchanting café culture. It was here that he found solace in the stimulating conversations with his fellow officers over a cup of coffee, while basking in the warm embrace of the French culture.

For General Kanota, food was more than just sustenance – it was a way of life. His love for culinary delights passed down through generations, and today his grandson, Thakur Man Singh Kanota, a noted food connoisseur himself, pays a tribute to his legacy with the addition of a new historical feature to Narain Niwas – Café Orleans, to mark the 80th year of his passing. The café is Kanota family’s ode to General Kanota and the memorable days he spent as a captain of the British Army during the First World War in France.

Despite having a smaller selection than other eateries in the hotel, the menu is meticulously crafted to appeal to both tourists and locals. If you are looking for something light and refreshing, the farm-fresh naked leaf fig salad or compressed watermelon feta cheese salad are excellent choices. If you need something more filling, the Kanota Panini with cottage cheese, tomato, hummus, and veggies or the European Panini with pesto, chicken, olives, jalapeno, and lettuce are perfect for a quick bite. The menu also includes soul-satisfying soups, like the ginger carrot soup and slow-roasted bone chicken soup, as well as filling wraps and burritos. Be sure to save room for dessert and indulge in homemade donuts or the orange and wild honey cake. To wash these down, there is a selection of freshly brewed coffee, tea, and refreshing shakes and juices on offer.

Hailing from Mumbai, Chef Akshay Pandit was always inquisitive about the local food and culture of Rajasthan. Ever since he took the role of the Executive Chef at Crowne Plaza in 2019, along with his team of culinary experts, he has been exploring the lesser-known pockets of the state to move beyond the usual dal, bati and choorma that one often associates with Rajasthani food. In their quest to find out about the popular local delicacies of the region, the team has been on many a culinary excursion throughout Rajasthan. After a long hiatus owing to the pandemic, they have curated a 10-day food festival ‘Excursion Through Royal Shekhawat’at their Global Cuisine Restaurant, Socorro.

Talking about the idea behind the festival, Chef Akshay says: “The roots of the Shekhawati Food Festival go back to 2019 when we explored the Thar region of Rajasthan to bring to the fore local delicacies from the area. It involved going to the houses of the rural families there and learning from them the technique as well as the science behind their food. This time, owing to the Covid-19 protocols, we could not visit the houses of people. However, we visited the house of one of our team member in Sikar to personally experience the true flavours of the Shekhawati region.”

On being asked about his culinary observations of the Shekhawati region, he says: “There is extensive use of dairy products like curd, paneer and chenna. The gravies are thick and the ingredients are rich, suggesting a possible Mughal influence on the warrior-kings of the region. Locally grown beans like ‘fofaliya’ are a seasonal staple.”

Instead of the typical Ker Sangri Ki Sabzi one is bound to find at all Rajasthani food spreads, there is Sangri Ki Tuk on the starter menu. Made with a paste of Sangri, hung curd, dry fruits and mawa, it is a great option for vegetarians along with Kute Masale Ka Paneer. For non-vegetarians, the melt-in-your-mouth Sikari Maans Ke Sule are a must-have.

In the main course, dishes like Dahi Papad Ki Tarkari and Chene aur Makhane ki Sabzi stands out. The usual Aloo Mangodi has been given a skip for the Mangodi Saag. For non-vegetarians,  Shekhawati Murg and Safed Maans are on the menu. These delicacies are paired with Kaki Sa Ki Rotiyaan. To add to the native taste and give a homely touch to the meal, three women from Jhunjhunu have especially come to Jaipur to man the bread counter at the fest. They have brought a variety of flours from their village to dish out piping hot Bajra, Bejad, Makka rotis and Tikkad laden with dollops of ghee.

However, dal baati lovers will not be disappointed as the quintessential bati, dal panchmel and the colourful spread of choormas too has been included in the menu. In fact, there is also Masala Baati from Sikar, Dry Fruit Baati from Jhunjhunu and Kaju Matar Ki Baati to sample. A wide variety of unique chutneys and pickles including karele ka achaar and kachhe kele ki chutney are on offer too. If you’re big on chaat, you can gorge on Khatte Meethe Makka Ki Chaat, Karari Bhindi Ki Chaat, Chana Chatkara et al. The Dhungari Chaach is a thoughtful addition to help gourmands wash down the rich and spicy main course.

To end the meal, the Khopre Ka Sheera, Badam Pista Shreekhand and Kaddu Ka Halwa are innovative options to try. The traditional Ghewar, Gujia, Soan Papdi, Kheer and Imarti are there too for those who aren’t too willing to experiment with their palate.

If you think Rajasthani food is just about Dal, Baati and Choorma, then this is a food curation you may like to explore. In addition to the food, you can also savour some soulful music from the state being rendered by folk musicians. The festival is on for dinner till 19 September at Socorro in Crowne Plaza.

With the winter season setting in and the evenings becoming cooler, Hotel Jaipur Marriott has come up with a unique concept of ‘Grills By The Pool’. One will now be able to enjoy a wide variety of vegetarian as well as non-vegetarian grilled delicacies at the poolside of the hotel in the evenings. The restaurant will be open daily from 7 pm to 11 pm.

 

A unique attraction of the place is the live kitchen where guests can enjoy the sight of the food being made right in front of them. Along with a wide array of vegetarian and non-vegetarian grills, a host of sea food options like prawns, lobsters and squids are also available.

 

It is noteworthy that while the grills are accompanied with roast potatoes, grilled vegetable and a choice of sauce, the tandoori dishes are served with the signature Indian bread and dal makhni.
