The Hathodi Maar Atta Chicken at this food festival is unmissable

When one thinks of Punjabi cuisine, what instantly pops up in one’s mind is rich and buttery delicacies like Makke Ki Roti and Sarson Ka Saag, Murgh Makhani, stuffed parathas and kulchas. The Feisty Punjabi Rasoi festival at Chaandi restaurant at Hotel Hilton is dishing out some out of the box Punjabi dishes for the people of Jaipur which are not on their regular menu.

Telling more about the food festival, Executive Chef Hilton Jaipur, Japvir Vohra says: “The Feisty Punjabi Rasoi is an ensemble of picks from Amritsar, Jalandhar, Patiala and Kapurthala. It includes some iconic dishes like the Malerkotla Atta Chicken, Jhinga Patiala, Amritsari Chole Kulche, among others.”

The Malerkotla Atta Chicken is definitely one of the major highlights of this festival. Marinated overnight and sealed in atta dough, the chicken is then cooked in a tandoor. While the atta dough hardens to an extent that one has to use a ‘hathodi’ (hammer) to break it, the chicken inside is unbelievably tender and succulent. Aptly, it is also called ‘Hathodi Mar Atta Chicken’.

Other must try dishes here include the baingan ka bharta, pindi channa and the stuffed kulchas. When it comes to dessert, one can’t miss out on the ganne ka halwa and paneer ke kheer. With moderate amount of sweetness, they taste as unique as they sound.

To add to the Punjabi vibe, the serving staff at the restaurant was also donning Punjabi attire of kurta pyjamas and turbans. Live performances by seasoned ghazal and classical singer of Jaipur, Zaheer Ahmed and the pool side seating adds a special charm to the festival.

One can choose from either the a la carte menu or the Punjabi Thaali priced at 1200 (vegetarian) and 1300 (non vegetarian) per person plus taxes. The festival is on till 2 July.
